When did you know you wanted to become a chef?
Ever since I was a child I dreamt of working as a chef at The Dorchester. I was inspired by my parents’ love of cooking and how they cooked from their hearts. After seeing an advertisement in a catering magazine stating how The Dorchester was ‘the place to be and work’, I told my mum that this was where I wanted to be a chef. She encouraged me by saying that if I worked hard enough anything would be possible. Now she’s so proud because she understands how much this means to me.
Tell us about your time The Dorchester
I moved from Sri Lanka in 1995 when I became commis chef at The Dorchester. I was later promoted to executive sous chef and recently I became executive chef, overseeing six kitchens and 100 chefs. I believe I have the greatest team and the best kitchen in London, so I really am living the dream. Over the years the hotel has become like a second home and I’ve learnt so much. Preparing food for people is one of the most precious things you can do. We also work really closely with the finest local suppliers, who assist us in demonstrating our commitment to quality, seasonality and sustainability.
Cork Street
Mayfair’s celebrated Cork Street has been at the heart of London’s art landscape for decades. Lined with prestigious galleries spanning a diverse catalogue of genre, the first gallery to open here in 1925, The Mayor Gallery, cemented the street’s international reputation by showcasing emerging artists like Francis Bacon, Max Ernst and Paul Klee. A couple of doors down at number 19 Cork Street, you’ll find Browse and Darby, which presents a carefully curated selection of Modern British paintings, drawings and prints. Sandwiched between these two heavyweights is The Redfern Gallery, where the focus is on contemporary works across a range of medium, including pieces by David Hockney and Bridget Riley. Messums London, meanwhile, celebrates the craft and creativity of artists across a range of forms, while Waddington Custot exhibits an impressive selection of prominent 20th century European artists.
George Frideric Handel (1685-1759)
Famous around the world for his operas and organ concertos, Handel was born in Germany but moved to Britain at the age of 27. He took up residence in this terraced brick building on Brook Street in 1723, allowing him to be within walking distance of the King’s Theatre on Haymarket, which was where many of his operas were performed. He clearly found inspiration in his handsome Mayfair surrounds, as it was here that he wrote perhaps his best-known work – the oratorio Messiah. It’s rumoured the composition took the talented musician less than four weeks to complete.
